So... What DO you eat?

I've been asked this a lot lately. And I'll be straight up with you. I have no flippin clue. I haven't had a chance to really find my footing in this Gluten Free-Peanut Free world I now live in. All I know is that I can definitely eat the Caesar Salad with Shrimp at Outback and Chipotle is a godsend. I'd live on guac & chips for the remainder of my days if I could.

I don't know that I'll ever do the whole recipe-sharing thing on here. Food photography irritates me, so step-by-step photos of what I'm cooking just isn't something I'm dying to do. But I hate when I try to make a recipe off of a blog and their aren't pictures. I came up with the next best thing {I think}. Like millions of housewives out there, I have spent hours and hours of my life perusing Pinterest. Actually, I was on it way back when I only knew 1 person who was a member and had to send her a PM on Twitter to ask her to invite me {Remember that, Lisa??}. Just like Chipotle has been a Gluten Free-Peanut Free godsend, so has Pinterest. I assure you that I am not being overly dramatic. I'd be lost without it. Most of what I'm eating these days comes from suggestions and recipes I've found by clicking through hundreds of pins.

So... What DO I eat? Here are a few recipes/ideas you can find on other blogs/sites. I'll try to share a few every once in a while since it's hard to know what's worth trying and what's not. These are things that have found a permanent place in my life.

Almond-Coconut Butter {really good on rice cakes}
Mason Jar Salads  {I usually make these on Sundays so they're ready to go during the week}
Mock Maggiano's Salad & Dressing {just note that I make mine with Rice Vinegar & omit the sugar}
Gluten Free Chocolate Chip Cookie Dough {I had no luck baking these but it's an amazing "cookie dough" when you mix it up and stick it in the fridge}
Pepperoncini Beef  {I skip step #2 and love to use this as filling for tacos or on nachos}
Mexican Chicken {I love that it takes so long to cook because I can pop it in the oven before the girls get home & it isn't ready until dinnertime}

I also eat a lot of Corn Chex, Rice Chex, tortilla chips, a little bit of popcorn, tons of fruit, spaghetti squash, almonds, various forms of chicken & beef, an occasional chocolate bar, and some Ben & Jerry's {though that has been giving me issues. ::tears::}. I've been using potato starch in place of flour in some of my old stand by recipes {I'd be lost if I couldn't make my mom's cheese soup} and packaged gluten free cornflake crumbs in place of regular ones {I would make my own, but ounce for ounce the premade ones were about the same price}. I juice my breakfast because I don't really like breakfast in the first place and pretty much stick to salads or a rice cake with almond butter for lunch. That sounds ridiculously restrictive, but I swear it isn't. I eat a ton!
